Here’s what you’ll need:

  • 1 egg

  • ⅓ cup brown sugar

  • ½ tsp baking powder

  • ⅓ cup extra virgin olive oil

  • ½ tsp cinnamon

  • 1 cup rolled oats

  • ½ cup desiccated coconut

  • ⅓ cup almond meal

  • ¼ cup pumpkin seeds

  • 2 Tbsp flax seeds

  • 50g dark chocolate

Method:

  1. Preheat oven to 170°C (320°F).

  2. Whisk together egg, brown sugar, and extra virgin olive oil.

  3. Sprinkle in baking powder and cinnamon, whisk again.

  4. Add rolled oats, coconut, almond meal, pumpkin seeds, and flax seeds. Mix until combined.

  5. Roll dough into balls with damp hands, place on tray, and flatten slightly.

  6. Top with chopped dark chocolate pieces, pressing them in gently.

  7. Bake for 14-15 minutes or until golden brown.
